The vegetable garden is the space protected from the wind and prying eyes. It has always been the hortus conclusus of the convent.

Peace and contemplation

Thanks to its private and secluded position, the vegetable garden is an oasis of peace, where you can lose yourself in the flowered paths, rest in the shade of the pergolas and on the stone benches, or read on the lawn, enjoying the ever-changing views.

A vegetable garden that is also a garden

Many of the vegetables used in the Bistro and Restaurant are grown by our farmers within the walls of the castle: this was the main source of income for the Poor Clares of the convent over five hundred years ago.

The vineyard

Agavi, yucche and euphorbia combine with the vineyard, which is bordered by mastic and myrtle, and prickly pears sprouting from the ancient dry stone walls. Olive and carob trees accompany us along paths rich in history, in shady corners, now sunny, where the scent of salt combines with the aromas of medicinal herbs, sage and rosemary.

In front of this blue sea, immersed in the green of the Bay of Cartaromana, grows the Biancolella, which Casa D'Ambra transforms into CASTELLO, our wine.
